Pumpkin Spice Overnight Oats
I love cooking and baking but sometimes I don’t want to make time for it.
One of my go-to easy breakfast and/or snacks is overnight oats! For those of you who aren’t familiar with overnight oats, it is SO easy! You could even heat them up if you actually prefer heated oatmeal. The steps are the following…
get oats
add other flavor or fillings
add milk (or water if you wanted!)
let soak over night!
Last week I made Sally’s Baking Addiction pumpkin donuts and had some leftover pumpkin puree. I ended up using it for some overnight oats that might be my new jam for the fall!
Here’s an estimate of what I threw into an old Teddie’s Peanut butter jar…feel free to modify to taste or add more milk to make sure all contents are going to have enough milk to soak up.
1/4 cup oats
1/4 cup pumpkin puree
1/4 tsp pumpkin spice
1/4 tsp cinnamon
1 tsp maple syrup
1 tsp vanilla
1 tbsp cocoa nibs
1 tbsp raisins
1 cup oat milk
Overnight oats are great for meal prepping for the week and also great for when you travel for races. I will often pack a bag of oats with some other fillings in it and then buy milk at my destination and throw in the fridge or heat up oats at the hotel.
